PUMPKIN-SPICE BREAD

 

This recipe was shared with us by long-time customers, who buy a trunk-load of Long Island Cheese pumpkins each year for baking!

 

Preheat oven to 350F. Grease a 9"x5" loaf pan.

 

3 c all-purpose flour

2 tsp baking powder

1 1/4 tsp salt

1 tsp baking soda

1 tsp ground cinnamon

1/4 tsp ground allspice

2 eggs

16 oz pumpkin puree

1 c packed brown sugar

1/2 c maple syrup

1/4 c vegetable oil

1/2 c dark seedless or golden raisins

1/2 c chopped pecans

 

In a large bowl, mix first 6 ingredients. In medium bowl, beat eggs with pumpkin, brown sugar, maple syrup and oil. Stir in flour mixture just until flour is moistened. Gently stir in raisins and pecans. Spoon batter evenly into a loaf pan.

 

Bake 1 hr. 15 min. or until a toothpick inserted in center comes out clean. Cool in pan for 10 min. Remove bread from pan and finish cooling on wire rack.
